Quick and easy potluck recipe
How many times have you been asked over to someone’s house for dinner and they’ve asked you to bring a dish to pass? Or what about something to take to a potluck? Book club?
I try to find a recipe that has simple ingredients, is quick to make, sure to be delicious and won’t break the bank. So, if I’m not taking a dessert, I’m usually taking a salad. Yes, it’s very easy to go to the pre-made salads and dress them up, but it’s also very easy to throw a fresh one together.
This cabbage salad recipe is super easy to throw together quickly and it’s also a highly requested salad by my friends. Let me show you….
You’ll need the following ingredients
- Shredded cabbage – I like red cabbage, but green will work too.
- Shredded or matchstick carrots – a bag of coleslaw mix would take care of both of these items
- Bell pepper – pick whatever color you like
- Cherry or grape tomatoes – you can omit if you don’t like tomatoes
- White beans – cannellini, navy, great northern, garbanzo you pick
- Onion – red, sweet, green onions – up to you
- Artichoke hearts
- Fresh herbs – parsley, basil or cilantro work well, but be sure to get fresh
- Italian dressing – pick your favorite or make your own
Some other delicious things that you could throw in this salad – fresh mozzarella pearls, olives, salami and/or pepperoni,… really anything that sounds good will taste good!
All of these ingredients are completely optional and can be switched out for whatever you like or completely omitted.
I cut everything up into bite size pieces and mix it all together into a big bowl.
This is one of those salads that tastes better the next day. However, you can serve it immediately, or let it sit in the fridge for a day to marinate.

Italian Cabbage Salad
Ingredients
- 1 Bell Pepper
- 1 pint cherry or grape tomatos
- 1/2 head cabbage, shredded
- 1/2 onion red or sweet
- 1 can white beans, drained and rinsed
- 1 can artichokes – quartered
- 1-1/2 cups carrots matchstick or shredded
- cilanto or parsley, chopped
- 1 bottle italian dressing
